Starter

Sambusa

Dough shells (samosas) stuffed with combination of lentils, onion and herbs with spices which can be used as an appetisers and also as a light snacks.

Chechebsa

Classic breakfast dish made of flatbread (kita) which is torn into small pieces and mixed with berbere and niter kibbeh(a clarified butter) until it’s a moist and soft mixture.

Popular breakfast fast made of eggs, onions, peppers served with gluten free tef injera or bread

Firfir

A small pieces of torn injera mixed with a well cooked stew which is made of fresh or dried beef ( or without any meat) and spices( berbere). It can be eaten for breakfast, lunch or even dinner

Gomen

Green leafy vegetables such as spinach or green cabbage and it is best for vegans and it can also be mixed with beef for the non vegans.

Traditional breads

Injera

A sour fermented pancake-like flatbread with a slightly spongy texture, which is made of teff flour

Ambasha

Traditional flatbread, scored in decorative wheel pattern and it has a unique sweet-savoury flavour and it can be served as a bread for any dish.

Special drink

Tej

A special drink (honey wine) made from a fermented honey and a special kind of hops(gesho). It’s good for digestion after any meal
